The dope idea for this recipe for students by students was first inspired by my Student Life coworker Jessenia Sanchez. I was volunteering for the R’Pantry at the time of the idea pitch and decided to take action to figure out how we could realize it. With blessings from The Well, we aimed to use items already provided by the R’Pantry on a regular basis to help students put together quick, nutritious meals. This meal provides healthy fats, protein and fiber. It also goes well with gluten free bread! I hope that this will help support UCR peers in reaching their goals by supporting their health first.

Ingredients:

Avocado (1)

Bread (1-2 slices)

Chia Seeds (optional)

Olive Oil or Butter

Paprika (add lightly, optional for more flavor)

Pepper

Salt

Tomato (optional)

How To:

  1. Toast bread slice(s).
  2. Spread olive oil or butter evenly onto toasted bread.
  3. Spread mashed avocado on bread and season to liking with salt, pepper, and paprika.
  4. Top with diced tomato as desired.
